Serves: 5-6
5 Chicken Breasts
2 T. Olive Oil
1 t. minced Garlic
1/4 C. Apple Juice (or Pineapple Juice)
1/3 C. Brown Sugar
2 T. Ketchup
1 T. Apple Cider Vinegar
1/2 C. Water
pinch Red Pepper Flakes
1 T. Cornstarch
Directions:
Cut chicken into small pieces (1-2 inches - using meat scissors). Heat up a large skillet over medium heat. Add Olive Oil, brown chicken meat for about 10 minutes, stirring occassionally. Drain chicken.
Into medium sized mixing bowl mix Garlic, Apple (or Pineapple) Juice, Brown Sugar, Ketchup, Apple Cider Vinegar, Water, Soy Sauce, Red Pepper Flakes, and Cornstarch. Whisk together until cornstarch is dissolved and all ingredients are well combined.
Pour sauce over meat in skillet. Stir and coat meat in sauce. Reduce heat to low simmer and cover pan with lid at an angle to allow some steam to escape. Simmer for 20 minutes, stirring occasionally.
Serve over Rice.
