Sausage Stuffed Manicotti

Serves: 4-6

1 lb Pork Sausage (or Turkey Sausage)
2 C. Cottage Cheese
1 Pkg. Manicotti Shells
26 oz. Spaghetti Sauce
1 C. Mozzarella Cheese

Optional:
Sautéed mushrooms
Sautéed onions
Spinach
Tomato paste
Shredded Parmesan cheese

Mix Sausage & cottage cheese together (raw).  Stuff mixture into manicotti shells and place in 9x13 pan.  Pour spaghetti sauce over stuffed shells (distribute evenly to ensure all sides of each shell are coated with spaghetti sauce).  Cover pan and place in oven.  Cook for 50 min at 350.  Sprinkle mozzerella cheese evenly over manicotti and replace in oven for 10 min.  Allow 5-10 minutes to cool.

Holiday Turkey Recipe

Serves:12 to 32 (3 oz serving size) depending on size of turkey

1 Oven Bag (Turkey Size)
1 T. Flour
2 Stalks Celery (sliced)
1 medium Onion (sliced)
1 Turkey (12 to 24 lbs, thawed)
Olive Oil or Butter
Paprika (optional)

Preheat oven to 350º.

Shake flour in oven bag. Place in roasting pan at least 2 inches deep. Add vegetables to oven bag. Remove neck and giblets from turkey. Rinse turkey, pat dry.

Brush turkey with olive oil. Optional: sprinkle turkey with paprika for more even browning.

Place turkey in oven bag on top of vegetables. Close oven bag with nylon tie. Cut 6 half inch slits in top of oven bag. Insert meat thermometer through slit in bag, into thickest part of inner thigh, not touching bone. Tuck end of bag in pan.

Bake 2 to 2 1/2 hours for a 12-16 lb turkey; 2 1/2 to 3 hours for a 16-20 lb turkey; 3 to 3 1/2 hours for 20-24 lb turkey; or until meat thermometer reads 180º F.

Let stand in oven bag 15 minutes or cover with towel to keep warm until ready to carve and serve.

Southwest White Chili



8 Servings


1 C. White Onion (chopped)
2 T. Olive Oil
2 t. Ground Cumin
1 t. Dried Oregano Leaves
1 t. Garlic Powder
4 (14 1/2 oz.) Cans White Beans (don't drain or rinse)
4 C. Cubed Cooked Chicken or Turkey
2 C. Water }
2 t. Chicken Bullion } or 2 C. Chicken Broth
1 (4 1/2 oz.) Can Chopped Green Chilies
1 C. Shredded Mozzarella Cheese
Garlic Salt
Chili Pepper

Saute onion in the oil until translucent.  Add the other ingredients and simmer together. Add garlic salt and chili pepper to taste.  Cook at least 30 minutes.
