1 lb. hamburger substitute (or 1 lb. Hamburger)
1 T. Olive Oil
1 Onion (diced)
2 t. Garlic
1/4 C. Taco Seasoning
1 qt. bottled Tomatoes (blended)
1 can Kidney Beans (rinsed)
1 can Black Beans (rinsed)
1 can Black Beans (rinsed)
1 can Corn (or 2 C. frozen Corn)
1 can Diced Chiles
1 can Olives drained (sliced or throw in blender whole with the bottled tomatoes and pulse)
(Start hamburger substitute first).
Saute onion in 1 T. olive oil in a large cast iron pot. (Brown hamburger if using hamburger.) Add garlic, taco seasoning, blended tomatoes, kidney beans, black beans, corn, chiles, olives and cooked quinoa. Cover and simmer for at least 20 minutes after all ingredients have been added before serving. You can let it simmer longer if you have time (simmer means turn down to 2). A longer time will blend the flavors together better. If it's too thick you can thin with water or tomato sauce.

Serve with sour cream and shredded cheddar cheese. Also good with corn chips (not good for you though). Making your own tortilla chips in the oven would be the better choice.
