White Sauce

 White Sauce

PREP: 5 min; COOK: 5 min

Makes about 1 cup sauce


2 tablespoons margarine or butter

2 tablespoons all-purpose flour

1/4 teaspoon salt

1/8 teaspoon pepper

1 cup milk

  1. Melt margarine in 1 1/2-quart saucepan over low heat. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
  2. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Serve with vegeta-bles, or use as a sauce in casseroles.

1 TABLESPOON: Calories 25 (Calories from Fat 20); Fat 2g (Saturated 1g); Cholesterol 0mg; Sodium 60mg;

Carbohydrate 2g (Dietary Fiber 0g); Protein 0g

CHEESE SAUCE: Stir in 1/4 teaspoon ground mustard (dry) with the flour. After boiling and stirring sauce 1 minute, stir in 1/2 cup shredded Cheddar cheese (2 ounces) until melted. Serve with eggs or vegetables or over toast for Welsh Rabbit. Makes 1 1/3 cups sauce.

CURRY SAUCE: Stir in 1/2 teaspoon curry powder with the flour. Serve with chicken, lamb or shrimp.

DILL SAUCE: Stir in 1 teaspoon chopped fresh or 1/2 teaspoon dried dill weed and dash of ground nutmeg with the flour. Serve with fish.

MUSTARD SAUCE: Decrease margarine to 1 tablespoon and flour to 1 tablespoon. After boiling and stirring sauce 1 minute, stir in 3 tablespoons mustard and 1 tablespoon prepared horseradish. Serve with beef, veal, ham or vegetables.

THICK WHITE SAUCE: Increase margarine to 1/4 cup and flour to 1/4 cup.

THIN WHITE SAUCE: Decrease margarine to 1 tablespoon and flour to 1 tablespoon.

We 4x this recipe for creamy eggs over toast / biscuits for a family of 8. Can add 1lb sausage for added flavor. We use about 20 hard boiled eggs to w.

Vanilla sauce for waffles and pancakes

2 cups milk
1/4 cup sugar
1/4 cup waffle or pancake batter
1 1/2 teaspoons vanilla

For our family of eight I double this.

Put milk, sugar and butter in a medium size sauce pan. Bring to boil over medium high heat and slowly boil for about five minutes. Remove from heat and add the vanilla. Put sauce over waffles or pancakes with fresh berries or frozen berries that have been thawed and whipped cream. It’s also good to sprinkle some granola or other nuts or seeds on top. I like sprinkling some granola on top of the batter right after I put the batter in the waffle iron before closing the lid.

Vanilla sauce to go over pancakes/waffle

When making pancakes or waffles reserve 1/4 c of the batter.

2 c Milk
1/4 c Sucanat or granulated sugar of your choice
1/4 c Reserved batter
2 t. Vanilla

Scaled milk and sugar together then whisk in batter. Boil 4-6 minutes to thicken stiring consistently. Remove from heat and add vanilla. Serve immediately with fresh or thawed fruit.
